‘Food is getting cool’ … says Nestle CTO, Stefan Palzer

This article provided me with a nice juxtaposition of ‘food’ and ‘CTO’ so I couldn’t resist adding to our nutritional newsletter …

Nestle CTO claims that accelerating consumer trends such as veganism and environmental concerns are bringing complexity to the food industry but also opportunities.

So what are the trends he’s spotted?

1. Plant-based nutrition is exploding
2. Instagramability is making the market look for greater novelty and diversity
3. Innovation such as vegan meat is driving change
4. Big hopes for biodegradable plastics
5. Consumers much more aware of their carbon footprint (not quick enough thought?)
6. Key challenges include how to provide highly affordable nutrition for low income consumers

Nutritional Psychiatry : Your Brain On Food

Interesting article from the Harvard Medical School, with links for you to dive deeper into the topic.

“Like an expensive car, your brain functions best when it gets only premium fuel. Eating high-quality foods that contain lots of vitamins, minerals, and antioxidants nourishes the brain and protects it from oxidative stress — the “waste” (free radicals) produced when the body uses oxygen, which can damage cells.”

Book of the week : The 4 Hour Body

Some of you will be familiar with Tim Ferris.

Fitness, marketing guru who has released a series of “4 hour” books including this one, The 4 Hour Body.

His “slow-carb” diet promises much and he also delivers a rapid weight loss plan that outlaws all fruit and dairy (except cottage cheese) and involves one “all-you-can-eat day” each week.

It’s extreme in parts but as with most of what Ferris produces, fascinating in equal measure.
